This pasta, like all Cipriani pastas, is fine, thin and elastic.

Keeping with the traditional recipe, it contains 7 eggs per kg of flour, but the removes the egg yolks in so doing keeping cholesterol at a minimum.

With 30% protein it combines traditional taste and texture with the needs of the modern diet.
